Hide individual _setting options 

Is there an easy way, or any way for that matter, to hide individual setting options. For example, I would like to hide the "Alignment:" option for the articles module and have it default to "left". There are several other options across several modules I would like to hide and assign a default value to "dumb down" the settings process.
