telephone 2 
Can we delete any field. I mean can we delete the telephone 2 field. Even if we dont enter Telephone number in the Telephone 2 filed, the column is still showing up and occupying space. is there any option to delete Telephone2 field

Not at this time, however you are able to go into the ViewContracts.ascx file and comment out or remove what you don't want displayed, however, you do so for all portals for that install.

Along the same lines, can we change the text "telephone 2" to display "Ext".

We are using the field but as an extension.

This is not currently an option with this module. However, you are able to do with with the User Defined Table module.
