How does the Language selector work? 

I currently have my website in 3 different languages. I want to do the same using DNN. I noticed when you select another language from the dropdownlist, the only thing that changes language is the date. How does the language selector work so that new pages/containers with the appropriate language displays?

The language selector itself does nothing more than that: change the language, or to be more precise, change the culture the page should be displayed in.

DotNetNuke does not support dynamic (content) localization out of the box, only static (interface) localization is supported.

Having said that, there are third party modules available that let you localize the content as well. These modules all work essentially the same: they read the current culture (language) from the page, and display content that corresponds to that culture. The edit controls of such module will let you enter content for each available locale in your portal.

If I correctly understand you, what you're asking for is how to display content in different languages depending on the selected language. This is not possible with the base dnn package but there are a couple of 3rd party modules that will help you on the task.
First read the dnn documentation regarding localization to better understand what's supported and then a quick look a some other posts in this same forum will give you the links to these modules that will help you with content localization.
